Don't mistake this for a good jew admitting guilt. It's overt bragging.

Looks like the 2007 edition is the one you want:

https://religion.fandom.com/wiki/Ariel_Toaff

Toaff's most recent book, Pasque di sangue. Ebrei d'Europa e omicidi rituali ("Passovers of Blood: The Jews of Europe and Ritual Murders"), was published in February 2007. ... Withdrawal from circulation

On February 14, 2007, Ariel Toaff said in a statement that he ordered the Italian publisher of his book to freeze distribution of his book so that he can "re-edit the passages which comprised the basis of the distortions and falsehoods that have been published in the media."

A week after its publication, Ariel Toaff withdrew the book from circulation, in order to "re-edit the passages which comprised the basis of the distortions and falsehoods that have been published in the media"

Second Edition (2008)

A revised, second edition of his work appeared in February, 2008. Toaff now concedes that the accusations of ritual murder, as a common Jewish practice, were entirely Christian fabrications,[18]. However, Toaff maintains that it is possible that some radical Jews may have actually killed on ritual purpose, or for resentment against Christian persecution [19].

which came first: the persecution or the ritual killing?

This is the revised version. Does anyone have the original not edited by the author to take out passages?

Yeah it's not "Satanists" doing these rituals imo, it's "Kabbalists" aka Talmudic Judaism.

Anytime someone shifts the blame to satanists, it re-directs the conversation into a christian paradigm and confuses the issue. Kabbalists do these acts basically out in the open, satanist is a vague catch-all term that includes edgy idiots.

If you read the description it's just a book about the murder of Simon or Trent. They are not admitting anything.

Amazon wouldn't sell the version with all the admitting in it.

Hes not Israeli, he's Italian. He's the son of the former chief rabbi of Rome. People saying "Oh, he's not admitting anything", it's only the most well-known event of ritualistic human sacrifice in history, you know, not much, right?

And while it's mostly about Simon of Trent, it talks about many historical crimes, including merchants selling dried Christian blood to use as cooking ingredients.

Memes aren't going to convince anybody that won't believe what they want to believe. If you want to spread the truth, read more in depth, historical analysis.
