This is really a testament to how complex patterns can form from such simple processes (and how pleasing we find them). It's not surprising that the ancients found these same patterns, perhaps via different means (waves on water maybe?).

Really raises the question of how they knew? This appears to be cross cultural knowledge dating back for thousands of years.

Would it be possible to attach a plate to an instrument (e.g. a violin) to create similar patterns?

Yes, some such things could have been done. But they also seemed to understand things associated with specific frequencies which we are only now (last couple hundred years) seem to comprehend. The combination suggests a deeper understanding of frequencies beyond that of just visualization and shapes.
