RISC. In fact, anything other than ARM. Apple might be turning around ARM with the M1 chip but more work needs to be done. ARM is slow, buggy, and is shoveled into every low priced computer. Apple is the only vendor (I believe, I could be wrong) that is working on the ARM to be a useful CPU.

Apple chose ARM, I suspect, probably because it gave them a way to develop a semi-custom CPU using pre-existing tools. As they gain more experience in the field, we may see them creating their own private IP CPUs based on in house tech.
