  2. Most Italian recipes are made differently across the country, depending on what region you're in and what local ingredients are available.
  3. Pappardelle is used as often as tagliatelle, even in Bologna, because of the width of the noodles.
  4. The first published version of the recipe doesn't include the use of tomatoes, and is actually extremely tasty.
  5. If you really want a good Italian cookbook, buy Sorry about the Amazon link. It's where the recipe we've been discussing became popularized.
