I'm interested in how that actually works. I don't think for a second that each provider is running a dedicated electrical line to my place or can track where the power they generate goes. So how do they determine who's electricity I used each month?

There are 3 types of companies: Generators, Distributors, and Providers. Providers buy capacity from Generators (solar, wind, nat-gas, coal, nuclear), package it and sell it to you as a ratepayer. Distributors keep up the lines to everyone, and get a cut of everyone's bill.

Okay, how do they determine who's electricity I used? Compared to internet data where the source and destination is included on the data packets; how do they do that with the actual power along the power line?

Texas was deregulated to basically allow unlimited rates. Having a monthly bill of $300 for a studio apartment is common there.
