You move the skillet or pot first. Really though, you ideally don't want to set anything on fire in the first place. We start there.

I personally don't like my spices over my stove as they're more likely to get heated/cooled and moist from steam. I've had some go stale faster, but it was also probably bad ventilation (it was a rental).

I don't know if it will be a problem. If it is, I'll rebuild it differently.
I don't see the heat being an issue, but you'll have to clean it and the spice bottles from grease buildup.

yah just let the wife cook under it for a few months then wipe the underside with a paper towel and see what the deal is, would be my approach.
