It is a "baton rouge" which is a red stick that the pepper pickers use to compare the color of the pepper to in order to determine the optimal picking time. Baton rouge literally translates to "red stick" from French. You only pick the ones that match and let the rest continue to ripen. The Tabasco Sauce makers use these baton rouge for this and it is tradition now.

Nice! I knew what Baton Rouge meant, but wasn't aware it was an actual thing. My first attempt growing Tabasco peppers. Depending on the results of my ferments, they may make it into future rotations. Will investigate procuring a red stick if that happens. Thanks for the info!
