If they had been a tad less dumb, they would have diluted/mixed the cocaine with the cheese, and then chemically reversed the process after delivery

Not sure if it's doable with cheese, but I know they got caught once doing that with another substance, soda if memory serves, it could have worked and it worked several times before they got caught, somebody probably ratted on them and told authorities to chemically test that particular batch of soda, because you need a bit more than just sheer luck or standard x-rays in such a case
