Tonight's supper. Everything from scratch - did add some Da' Bomb early on for smoky heat, just after this photo, I added my reaper mash.

The base of the sauce is a roux made using the fond from the andouille and chicken. The trick is in getting the roux that nice dark color without burning it. Add some homemade chicken stock and bring it slowly up.
