Its very cool technology, its just that its current popular use (essentially protecting and certifying digital art files) is relatively benign and boring. One more exciting use for it is to sign news articles, documents, or any material that is at risk of being edited, modified, or otherwise changed. Basically, the 'signature' of that data is locked into the blockchain, so any attempts to sneakily change it would be rejected by the network as illegitimate. You could probably come up with 100 uses for NFT just within the domain of security/file integrity. So don't dismiss the technology because you see some hipsters riding on the hype of one potential use for it.

I could see it being used in the future for a proof of insurance certificate that anyone can verify on a blockchain.

Protecting from what? All it is, is cryptographic proof of ownership over pixels that can be copied by anyone. Protection from someone else saying, "no I paid 500k to disaster girl, not him"?

Certification of ownership for a given SHA-256 of a digital file, thats all this is. Nothing has changed regarding the ease of copying digital files.

To my understanding, I don't think it works like that. Its more for certifying the uniqueness of a specific digital file, and then locking that into a blockchain (just like cryptocurrencies do today with transactions).

For anyone who doesn't know what NFT's are: It's more or less like very, very complicated trading cards, except it's bitcoin. Say you want the Mona Lisa. Well you don't actually buy the Mona Lisa, you buy a picture someone took of the Mona Lisa with a unique signature on it for lods of emone, and ideally, that picture because it has a certain signature on it, or the rarity of that signature, will only go up in price so you can sell it back for a profit. It's a lot like TF2 hats.

Another primary use for it is digital artists to digitally sign their work. That means the original digital file can be seen/treated in the same way a physical original art piece is.

Kind of, except the artist still holds on to the copyright. The owner of the NFT just owns the painting. Everyone else just owns a poster of it.

NFT is like a certificate of authenticity for a digital asset, a picture, gaming character, music track, digital ticket, etc.

For example, imagine you buy a limited edition print of a photograph, owning the certificate of authenticity for your print confers value to that print but as the owner of the print you do not have any exclusivity rights over that photo, you don’t own the copyright of the photo and you can´t sell reprints or use it for commercial purposes, all you have is a certificate of authenticity.

I think the money comes from the same people who pay a million dollars for a drawing of two lines and one square, as long as it is signed by somebody famous. They might be mentally impaired or they probably use it for money laundering and hope for the best, like some other sucker paying the same value when they need to cash it out.
