Responded in another comment, but it's basically just mythological imagery. Christians associate snakes with evil, and also think of anything non-Christian, that is to say pagan beliefs, as being evil. Faggy Patty got rid of the pagans, thus Faggy Patty removed the snakes from Ireland.
