When it's convenient sex and gender are interchangeable, then when they go into subvert mode they are distinct where sex is biological and gender is sex identity.
So you can choose whatever gender you want as it's a personal identity and it has nothing to do with sex up till they switch the meaning and insist sex is the same as gender and you are evil for not reaffirming their identity.
To be diplomatic you could let them have (((gender))) and insist it's a worthless word and stick to sex to refer to biological sex. I still feel like that's giving too much but it's probably more pragmatic than pissing around with their mutant word salad bullshit
