I want to fry them up in a pan. What kind of grease do you guys recommend? Do I use a little or a lot?

I use my cast iron with a little vegetable oil. You don't need to use much and it should brown and crisp up for you. Like CZ said, you don't "need" to use oil, but they turn out better if you do imo.

It has its uses. Maybe I should start buying lard. That would be the alternative.
