*edit... aww man those pics came in huge, open in new window, sry
distilling is a hobby, its not cheaper... or time saving. In Fact it takes a very long time to get finished product. Like for 5 gallon of wash it would take all day, then cuts etc
I never done whiskey, i don't have a pot distill, just a reflux. I want to make a new column for what I have, like 4 feet some tall to more reflux action going, for a cleaner neutral.
What a lot of people do is buy a beer keg and modify it to work like this

I would like to have a setup like this, but it would need to be used in my garage. Annnnnd... its not legal to do, so if someone seen me in there and called the cops. yeah
but you wouldnt do whisky in a reflux anys, it strip away all the flavor. that is why you a pot then you age is in oak barrels if you really want to get fancy. They sell them, but crazy expensive.
I just did neutral, i think the highest i ever got was 95% (you'll never hit 100% i think the highest you could is like 98%) then you water it down to whatever 80 proof is 40% i think. Its some powerful stuff, you could run a engine on it. thats with a reflux
see how clean it burns? thats why it is scary stuff and you need to keep a eye on your still.

here is a pic of usually what i would produce with a hydrometer

here is what i mean by taking cuts, notice i have a bowl under the collection jar

here is the ferment buckets, i used to use glass carboys but i had one shatter on me... they have a bathtowel for insulation and heat pad to keep it proper range for the yeast, not to hot or yeast will stress causeing off flavors... when I would, Id make 15 gallons at once since it takes like a week. but once its fermented it will last for months.

overall distilling is pretty safe, you just need to babysit it. And the parts where people say "you'll go blind" is bullshit to. You just throw out the 200 some milliliters for 5 gallons that only part that contain the methanol & acetone, or use it for parts cleaner. it just has a much lower boiling temp than the ethanol
yikes this has gotten long, anyways i havent ran a batch in like a year now. But i read up on it. Like i said in the beginning its a "craft" you have to get good at it. it is a lot of work to do. thats why when testing cuts you actually dont swallow it (you'll get hammered) but spit it out.
and all cuts are ..... sigh this is just going to get longer.
there is foreshots (the bad dont drink stuff), head, heart, and tails in a distill run... you are shooting for the heart. the other two contains more water, therefore more flavor from your wash which is important to look out for when making a neutral
okay im done, also this with this guy he runs a store but has a TON of good educational videos. Plus if ya had a question you could call him up. Hes a nice guy. not a promotion
