Collectively they're huge in the butchery and charcuterie business, and have published numerous books dealing with curing, preservation and related topics. Their "Home Production of Quality Meats and Sausages" was one of the first comprehensive references on the topic, and is the first book I purchased when I started curing meats. Basically it is the hobbyist's version of the Bible on the topic. Look at all the other titles they have as well.

If you have even the slightest interest in preservation of meats and other foods, give this site at least a cursory review.
