They use very little power and are small so they are great for: - Torrent downloader. Schedule to run when you sleep / are not home
Kodi media player - Use incursion + debrid service or go the sonarr / radarr route to auto download / update your media library. Or just use it to play file you already have
Home automation - turn stuff on / off or monitor it
Run centralized web filter / firewall / etc
Use Cacti for SNMP based monitoring / logging and display in pretty graphs
Get more powerful SOC (RPI3 or Odroid or similar) and run a desktop on it?
Broke it? So what? Just flash the image again and start over.

Digital signage - Just set it up to run a slideshow script a boot and you have digital signage box!
IP Cam server - can get / setup / run free zoneminder and run all your IP Cams off it for office / home monitoring or surveillance.
Those are fantastic! I have one setup to do the equivalent of digital signage. It basically just runs a slideshow on boot reading contents of specified directory (on a USB). Solid, stable and works great!
