Yeah I would definitely want to stay away from major airports
I have no idea - 'cause I've never stolen a plane - but I'd GUESS that your best bet would be to fly by day and plan ahead to stop at a regional airport or two. Just because you can go however many miles doesn't mean you want to push it to the limit.
You'll also need to steal the plane at a time where the owner isn't going to notice it. If they fly on weekends, then you'd want to steal it Monday morning. You could probably get away with taking off early. Yeah, it's dark - but you just need to go south for a bit and then head east. I suspect you could do a lot with apps on your phone or a tablet. That should help you quite a bit.
I guess you could learn how to properly hail the small airports down via radio ahead of time. You'll have to understand what they tell you - and not just when you're landing but when you're in their airspace. ATC ain't nothing to fuck with. Their commands are as good as law. And they can be dicks...
Also, fuel costs... I have no idea, as I haven't done the math, but it'll be about as expensive as driving an F250 the same distance. So, that's like 16 MPG if you're lucky. But, you're cutting a lot of miles out of the equation.
So... Yeah, it's still gonna be expensive.

So, you're just borrowing it - unless you're caught. (And you're so gonna get caught.)
