I just get them as low as I can without them buzzing

That's a fine goal. I do similar, but I want uniformity. Well, sorta uniformity. The skinny strings can have a lower action!

If I setup my own guitar, or have it done for me, we always aim for OEM spec - and then slightly lower. The OEM has a spec and you can look it up usually. Though, you kinda know it after a while.

That spec is usually high - 'cause they don't want the chance of a guitar buzzing when they play it at the store. So, we aim for slightly lower than spec. Even Martin does this. The height on 'em is an absurd action height, just so they don't buzz if someone plays them vigorously in the guitar store.

It's kinda a marketing thing, but they've done this for decades - as long as I remember.
