4.25% Salt Brine (2 Tbsp sea salt to 1 Qt H2O) Cloves Star Anise Allspice Berries Peppercorns

Fresh Horseradish Leaves + Bay Leaves + Whole Cherries = Tannins because there is nothing sadder than a mushy pickle.

HAve you ever had "Wickles"? I have quite a few heaven facing chilis (birds eye? Thai?) and I was thinking of trying my hand at a spicy pickle.

Oh yeah! I typically do a straight batch followed by a spicy one. Still waiting for the japs and serranos to pop.
