There are almost 40 megajoules of energy in a kilogram of body fat. Protein and carbs are only half of that. I rather consume fat, higher chance for spontaneous human combustion.
I forget what that clear grease is called but that grease doesn't have much flavor which is why you want to render it out of the cut when cooking. Drain the grease or save it for frying.
