If you're making bread from scratch, freeze after the first rise. When you want to use it, remove from freezer the night before and allow to rise until double in size then bake.
Otherwise, for store bought, a paper towel in the bag then into the freezer.
Oh interesting. The paper towel will absorb the frost?
I assume so, my grandparents always did this. I will say that I never cared for their thawed bread, but it is certainly nice to have if you're hungry. I bet if you took the time to put it in a better sealed container it would taste better.
I remember putting a slice of bread in with ex-frozen cookies to soften them up, good trick that.
