I double this and make 2 dishes, it'll last me a week. I have also experimented with the cheese (the reason not to use Velveeta is mainly because the "fake cheese" has a tad too many carbs); used mexican and american cheese (kek).
I have done store-shredded cabbage and also cut up my own. Cabbage is hella cheap and you need a whole cabbage to double this.
