Open Office doesn't come with most of the MS fonts. I've been struggling all afternoon to add them with nothing to show for it. The interwebs are no help either because the methods to fix the "broken packages" error I'm getting don't work.

At least you're not running 'doze, man.

I've been bricking linux installs since the mid 90s and so far I'm finding linuxmint reasonably stable. The MATE desktop runs well on low spec machines.

I ran Mint on a different machine for a long time. I figured Gallium was designed for Chromebooks so I'd give it a shot.
