Instead of 10 people herding chickens (do you herd chickens?) to slaughter, you now have 5 or less. Instead of 20 doing the slaughtering, you now have 10 or less. Every job is essential because of how complicated and important the economy is. The economy is more important than anybody's life.

Almost all jobs have some utility. This dividing them into essential and non-essential is stupid. It's one thing, if you're going to lock down for 24 hours and just say only the emergency responders come out. After 2 weeks, or 2 years, if you tell people not to come to work you're going to have problems; almost no matter what they do.
