I think most restaurants would be better off with a few, limited, but fantastic items.
I think that's one of the most applied critiques of Gordon Ramsey when he did his shows - though mostly dramatized, the menu streamlining and simplifying is always a great outcome.
My favorite pub really upped their game, with a new chef, limited menu and excellent weekly specials
Just need a few staples like Japan
Should keep menus 6" or smaller
