I see you're not in the USA.
In the USA, when a check is processed by a larger business, it's done with MICR. This is read and it verifies the check is a real check, and the business can often see in real time if your account is valid for funding.. It still goes to a clearinghouse to be paid, but this is electronic. If you have no money in your account, or the check has been withdrawn by the bank, most businesses will refuse it. Smaller businesses usually don't even accept them anymore unless you're a regular customer - maybe. It absolutely does not go to a branch to clear, it's a massive clearinghouse that handles multiple banks.
You can present a check as payment and immediately go pull the money out of your account, but you're not going to get many chances at this.
I'm not sure what backwater you live in, but in most of the world checks are just as real-time as any other instrument of payment. They just are a pain in the ass to handle because someone still has to mess with the paper. Your method hasn't been valid for probably two decades. Here, the federal law Check 21 requires checks to be processed electronically as much as possible.
