Every man-made virus is made in a way that it cannot mutate too much, otherwise it could backfire. The gain-of-function research creates such highly optimized spike proteins that any mutation large enough to evade acquired immunity renders it useless.

We don't know if the lab-leak theory is just another story they tell us because they know what we think about the Chinese. The creation of the virus was an international effort. The point of release is most likely not the point of origin, similar to cyber attacks that use VPN. Some say that Italian tailors for the opening ceremony of the Wuhan Military Olympics were used to spread the virus. Others say the US athletes carried the virus and this was the reason for their poor performance.

Yeah it's possible that there's some truth in the official chinese statement essentially saying "it came from the US"

I think "both sides" have to hide a lot. These viruses have a long history, starting in Plum Island. If the US presses too hard by releasing material about the Chinese involvement, the Chinese would counter with material that shows that they just continued the work of Ft. Detrick, and that the research was paid by CIA and Pentagon (e.g. through the EcoHealth alliance that paid the Wuhan lab and got Pentagon money). US and China will find an equilibrium of accusations without releasing too much proof.
