If I started a eatery, we would hopefully run out of food everyday.
It would be a smokehouse, only so much meat would be cooked the day prior.
Once people catch on and know only so much is available, they will line up for fall off the bone baby backs and stacked pulled pork sandwiches.
There is a local smokehouse doing this. Only open 3 days a week, while supplies last.
And they kill it.
