When aren't they mad. They get mad when you call them Hispanics, Mexicans, Spanish, native europe mixed, chicano, latino. And each descripter has their own subdivisions. If I can barely keep track of remembering whether you prefer a handshake or a fist bump, then there is no way in hell I will remember the proper word, and that goes double for stupid ass pronouns.
