They don't have to because the shooting distance is insignificant (less than a mile on average) compared to the size of the earth.

light refraction doesn't make a 4 mile curve seem like it's a flat plane. if it did to that extreem, then you would see some weird optical effects looking out a window when ascending in a plane.
