Bug eating is bullshit. It's not any more sustainable than chicken. The protein ratio you get raising them is the same as chicken. Chickens blow bugs out of the water if done on a homestead. Bugs are consumed whole so they have to be fed top quality non perishable proteins so you don't end up eating unprocessed toxins from their guts. You can feed chickens anything if the eat a little rotten food it doesn't matter because you don't eat the contents of their digestive system.
