In my experience people are primarily afraid of failure and the embarrassment that comes from it.
Softening those first blows are key, a couple ways I've found are lowering the cost of failure, or showing your own humility and describing a time you failed as well. The ability to self deprecate tends to loosen people up, as well.
Mind you, I'm teaching co-ed here as well. My approach for all male or all female would probably different.
