Caipirinha is an old school drink. For everything that's sacred, don't shake it. Don't use simple syrup. Don't stir it. Just mount it.

You'll need:

A tumbler

One or two limes

Sugar (sugarcane sugar if possible)

Brazilian cachaça

Crushed ice

It's about freshness and sweetness, so we have to be careful with the lime to avoid the bitter parts.

Remove the lime's butts

Cut it avoiding the white part in the middle

Keep cutting and remove the white part.

Grab a tumbler, put the lime and pour some sugar over it. I'm using white sugar and some brown sugar to add some flavor.

GENTLY smash the limes. Don't punish then, we don't want bitters. Then fill the tumbler with crushed ice. Complete with good cachaça. I used 2 oz, but there's no rule about it.

Insert a spoon between the glass and the ice, and GENTLY agitate the juice on the bottom, pull the ice up and down a bit, just to give it some mix. You don't want full mixing. While you drink it, the ice will slowly dilute your drink, the agitation will bring the different flavors, the alcohol, the sweet, the sour. Maybe you'll feel some sugar crystals in your mouth. It's part of it.

oh my god yes, caipirinhas are great, I have made pitchers of it with a friend (Brazilian) in college. Still have some cachaça

Just finished it, it was delicious. If I didn't have to work tomorrow, I'd make another one. I need to buy some cheaper cachaça for cocktails, this one is oak aged. But I wanted to post a caipirinha, and not so humbly, it was delicious.
