So far all I've ever done is: - Simple Syrup (white sugar) - Brown Simple Syrup (brown sugar) - Mint Simple Syrup (boil with mint leaves) - Honey Simple Syrup (honey instead of sugar)

I want to try: - Vanilla - Ginger / Ginger Lemon - Pineapple

Do you add water to the maple syrup to get it to be runnier? Like to use in cocktails.

No, you put the collected tree sap in a cauldron bring it to a boil and reduce it while skimming the scum off the top until you have the concentration ( color) of maple syrup you wish.
