Flavor is two parts, right?

One part in the mouth, another part up the nose.

Ethanol has a higher volatility and lower evaporation point than water.

How much do you want to smell the drink?

Beer and wine and straight liquor, or liquor on the rocks, you want to smell all of them, to appreciate it for what it is.

If you don't like the actual smell of the spirit, you get a cocktail, and you get a straw.

To add to this, well cocktails often use low quality liquor that smells...questionable...to say the least. You want the nose on a 25 year old Demerara rum. You want a straw when you're ruining perfectly good Coke with unaged Bacardi.
