I have no idea, but the seal is always impressive, and only seems to get better as you shake. I'm guessing it forms a small vacuum seal, but also that the metal rapidly cooling from being shaken with ice and liquid inside causes the metal to contract as well.

Correct on both counts. Stainless shakers contract because of the ice. That also causes a pressure change.
