Think I wanna make it with some new twists. Usually do sausage and meatballs. Wanna add pork neck bone and bragiole(sp?) - basically rolled up flank steak.

Here's what I'm thinking.

Hammer and season flank steak with salt, pepper, parsley, basil, mozzarella or something. Roll up and toothpick.

Olive oil large sauce pan. Cook sausage, brogiole, pork neck bones (seasoned). Remove and set aside.

Deglaze pan with butter. Add onions and garlic ( maybe crushed whole, maybe thin slice like Goodfellas). About two minutes. Add diced tomatoes. Add a table spoon or two of tomato paste.

Then comes the jar sauce (I'd like to make my own eventually, as well as paste), and some water. Add more tomato paste.

Season with salt, pepper, fresh parsley and basil. Add a bay leaf or two. Bring to a boil, then turn on low adding meats back in. Stir throughout the day.

Then the meatballs: get a ground mix of beef, pork and veal. Season with salt, pepper, fresh parsley and basil, oregano, crushed red pepper or cayenne. Add an egg, and breadcrumbs lightly soaked in milk, and mozzarella or some other cheese. Work it all in. Roll balls and fry in pan with olive oil.

Add to sauce. Maybe with some of the oil. Pour in some Red wine to help solidify and flavor. Add sugar if needed to sweeten up.

Slow cook! Stirring occasionally throughout the day. 4-8 hours. May even get my pasta machine out. Simple recipe. Boil in water with salt and olive oil. Drain and rinse with hot water. Then add a little butter. Sometimes coat with cheese before adding sauce.

Serve, removing bay leaf and neck bones.
