Ingredients:

2lbs red potatoes 1/2 to 1 cup apple cider vinegar 4 strips of bacon, at least, diced Half an onion, finely chopped Two cloves of garlic, minced 2 Tablespoons mustard 1 Tablespoon of pepper 3 Teaspoons of salt 1 Teaspoon of sugar

Optional: 1/4 cup fresh parsley (or a lot less because Theo hates them greens) 2 carrots, peeled

1) Put potatoes in a large pot, halving any that are fist size. Add two teaspoons of salt and then add water to cover potatoes by 2". Heat the pot to boiling then cover and cut the heat to a simmer. Simmer for ~15-20 min.

2) Drain the water from the potatoes, cover again, and put them back onto the stove to steam for 5 min.

3) Remove the potatoes from the pot and set aside to cool.

4) Put the pot back onto the stove and heat to medium-low. Once heated, add in the bacon(diced/cubed).

5) Remove the tasty bacon, once it becomes crisp, and set it aside. You'll go blind if you eat any of of it at this point.

6) In the still hot pot, add the chopped onion and cook down until tender, stirring frequently.

7) Add in; vinegar, mustard, garlic, pepper, salt and sugar and simmer for 5 min. Stir/deglaze the pot.

8) Remove the pot from heat and add in potatos and carrots. Cover and let sit, stirring occasionally, until room temp.

9) Stir in bacon, parsley and serve.

10) It's better cold...
