Jerk marinade:
One bunch of scallion
4-5 habaneros
1 TSP reaper paste (homemade)
6 cloves of garlic
1/2 of a large Vidalia onion
2 TSP maldon salt
1/2 TSP cracked black pepper
1 TBSP brown sugar
2 TSP 5+ spice (homemade - cinnamon, allspice, clove. cardamom, nutmeg [sometimes anise])
1/3 Cup Tamari
2 TBSP avocado oil
1/4 Cup White vinegar
1/8 Cup apple cider vinegar
2 TSP galangal (can use ginger)
2 TBSP fish sauce
1/3 Cup orange juice
1/8 cup lime juice
Fried Rice:
1 Cup small grain rice (washed)
2 brown eggs - scrambled
1 Cup fresh green bean - thirds'd
1/2 Vidalia inion - diced
3 carrots (1 purple, 1 orange, 1 White) - diced
1/4 of a coconut - shredded
scallion to finish
Fired Rice Sauce (eyeballed):
tamari
sesame oil
rice vinegar
fish sauce (iwashi)
shaoxing wine
