Not sure how backups work on iOS. The most convenient way I have found for mobile phone backups is FTP.

MTP is unstable stinking garbage (and released im 2004, thus deprecated), SMB is slow, USB-OTG reserves the USB port for hours (terrible ergonony) and doesn't preserve file date/time attributes, and Cloud services are not trustable.
