Interestingly... I've been buying small bags of einkorn flour - ancient ancestor to modern day wheat. Brand comes from Italy. Sent off for some whole grain to grind my own too. Not as much gluten in it - among it's touted properties. Have to work/knead it more to develop a dough mass though. Slightly earthier aroma/flavor too.

Check out "Caputo" flour from Italy. It is all we use my house now, my wife makes our bread, it is SOO much better than store bought, you just feel good after eating it, and don't get fat.
