couldnt you just disconnect the battery? i know its a really big battery and it is somewhere in the internals instead of the usuall little car battery most gas cars have but still

No way to actually get to a "battery disconnect" when the vehicle is on fire, sparking and sputtering. Some EV's have an easy to reach battery disconnect plug. A neighbor had a Nissan and there was a large plug which could be pulled, but it took a 10mm deep socket to get to it after the flap under the carpet was raised. No time for any of that when the vehicle is on fire.
One possibility rather than spraying water or foam is to cover the vehicle in sand -- they have a lot of sand bags which could be used. Maybe if the Firefighters (can't say "Firemen" any more) could get close enough.
Well they can, but you can still cause a short internally on the batter pack which is composed of multiple batteries.

When did "Will it survive being submerged in salt water?" become the new standard of why EV's are bad. All cars start doing crazy shit when you submerge them in salt water.
You can see how EVs are designed to remove vehicles from the car market in much shorter time periods than current technology. A normal ICE vehicle will remain on the road for 3-6 decades. EVs will be lucky if they see 2 decades of use. Given the battery packs, one to one and half decade seems far more likely.
