In short it makes it easier to get the concrete around whatever you are pouring with out having to move your pump truck several times. If you have a shorter boom that will just reach to the other side of what you are pouring it makes it harder to reach the stuff that is closer without moving the truck. It also keeps the pipe out of the way of people who are working on the ground. With a longer boom you can go up and then come down over the area you are working which gives better control and keeps you from having to move your pump truck.
