Hmm. Interesting. Most vegetarians I know (I don't personally know any vegans) started out by being exposed to it by other vegetarians.
What is your typical daily food intake like?
Breakfast is typically oatmeal with fruit, cinnamon, and flax seed (flax is for omega 3).
Lunch is a green smoothie. Kale or collard greens are top-tier vegetables in terms of nutrition. I'll make the smoothie using almond milk. I'll eat that with peanuts and more fruit.
In-between meal is 2 or 3 potatoes. I cut them into quarters and throw them in the microwave.
Dinner is usually 3 or 4 cups of lentils, the superior legume. It has the most protein of any legume (I think) and takes the shortest amount of time to cook. Add spices.
Snacks are fruits and veg, maybe junk food if I have it (rare). I eat a good amount of nuts, too. Goes to show you you don't have to eat soy if you don't want to.
How long have you been doing this?
That specific diet? Last 6 months maybe. I switch it up every now and then.
Vegan in general? 2+ years. Loving it every day. Wish I started sooner.
