During my 4th of July fest, I feed everyone breakfast. There's a line that forms and, as mentioned, it moves through pretty rapidly.
I basically need 3 more people, but I can do it with just one more person.
For that, we use paper plates and plastic cutlery. I do not have an industrial/professional dishwasher.
Paper plates and plastic cutlery is the only way to do something like that. Then all you have to clean is the utensils and pans you cooked with. Nobody wants to do the dishes after a hundred or so people have eaten
It wouldn't be too bad if I had a professional dishwasher that has trays that move through the washer and dryer. I didn't dedicate that much room to my kitchen. They take up like 15' x 3'. Their giant stainless steel affairs.
I did give it some consideration, but not serious consideration. It just didn't seem right. I can get away with a big stove and a stand mixer and all the appliances, but a big honking dish washer isn't going to be even remotely aesthetic and would be used so seldom that it's not worth it.
Yeah, that really takes a lot of space for the few times you would need such a thing, as well as, paper plates and plastic cutlery does exist. You made the right choice
