There are physiological differences. If you move from warmer to colder climes, you'll gain a layer of fat across the top of your back. The reverse is also true.

I imagine I definitely have that fat

You definitely do. Well, probably do.

It doesn't happen to people who are really skinny or people who are really fat - well, it's a variable layer of fat. If you put your hand on your shoulder, like over your trapezoid muscle group, you can feel it with your fingers. To you, it'll just feel normal.
