Is this played with three cards where the goal is to get 31 (aces count as 11, face cards count as 10)?

Sometimes, but mostly five card going for the best poker hands

I've played the 31, but not the 5 card.

I fucking love my car, for the record.

Anyhow, 31 is pretty universal. Your 5 card variant is probably regional - as I've been around and never encountered it - and I've played a whole lot of card games in my life.
