So, my current understanding is that Ashkenaz was a decendent of Gomer, who was an descendant of Japheth, who was a descendant of Noah.

But that would put him as some sort of Great-Great-Grand Uncle to Abram/Abraham, and clearly not subject to any covenant God made with Abraham and his descendants, because anyone descended from Ashkenaz was clearly not descended from Abraham.

!

So the question is, where do Ashkenazi Jews claim to be descended from Ashkenoz?

Because if they are descended from Ashkenoz, that wouldn't actually be Jews/Israelites at all, since they clearly aren't descended from Abraham, and wouldn't have the covenant with God, at least not the one that promised them Israel...

Perfect interpretation and exactly my point. I do wish I had the link to the original article in the Times of Israel but I do not. But plain and simple Azkenazi is not Abrahamic.

I mean, seriously, do you know anything about how Ashkenozi Jews got their name?

I do not, this is something that I literally just learned. This is wild.

I don't know the details on which they base the name "Ashkenazi". I learned of the distinction about 15 years ago and have since encountered it multiple times in various articles and videos. IMO it's an elephant in the room and I'm surprised to have seen so little discussion of it. The only conclusion I can draw from it is the same one you observe, so it IS significant.
