You get what you pay for. Most people are fine with one decimal place, but the people that need more accurate measurements probably need them to be a lot more accurate, which make them a lot more expensive.
- It often is just laziness by manufacturer.
- Many cars have .0/.5 thermometers, despite the manufacturer could have added an accurate thermometer for a few extra euros/dollars/pounds/etc. out of the e.g. €20000.
