It's simple son. But complex.
Plants are sugars. Sugars are plants. All plant matter is sugar.
Simple Sugars gets absorbed straight into the bloodstream. This creates an emergency response. Blood sugar level must be maintained in a narrow range or we coma out die.
Eat plants and straight away your blood plant level spikes. Insulin hormone is our emergency response.
It forces fat cells to absorb the sugar. More it is a fat burning inhibitor. You can never lose weight while insulin is present..
But the sugar is burned up fast that which isn't stored. So we crave. Eating plant creates more demand for food. Plants are low in usable nutrients so more craving.
Historically this was constrained by access to plants but now we have th fridges and shops ppl eat 6 times a day at least and almost all is plant.
So we get fatter and fatter.
Obesity is the outcome which puts a huge strain on the heart and that strain we call heart disease.
Biggest murder in human history is avocation of plant based diets.
It gets worse.
Inflammation. Depression. Pissing constantly. Poor sleep. Killers.
Know this. Humans evolved to eat once a day maybe twice. It's called fasting and it's when we HEAL our body. It also destroys cancer.
You cannot OMAD while eating plants. Only meat and fat.
There is very few acceptions to this rule. Avacado is one.

You’re applying simplistic logic of “sugar is bad” to every food with sugar. You are designed to digest fruits and vegetables in a safe manner, the examples you list are for foods with added “free sugars”, can’t apply that to whole foods like fruits and vegetables.
